Hazelnut, Plum and Chocolate Cake

This hazelnut, plum and chocolate cake is an incredible flavour combination. I have to admit, it’s been a while since I’ve had such a perfect trio – plums, nuts and chocolate complement each other beautifully, creating a fragrant, soft, moist and truly special cake. Highly recommended!

Ingredients for hazelnut, plum and chocolate cake:

  • 175 g butter
  • 500 g plums (such as damsons)
  • 170 g light brown sugar
  • 175 g plain flour
  • 175 g ground hazelnuts
  • 3 large eggs
  • 1¾ teaspoons baking powder
  • 50 g dark chocolate, chopped
  • 2 tablespoons whole hazelnuts (skinless), for topping

All ingredients should be at room temperature. Sift the flour with the baking powder and set aside. Set aside 4 plums, halve and stone them. Roughly chop the remaining plums.

In a mixing bowl, cream the butter and sugar until light and fluffy. Add the eggs one at a time, mixing well after each addition. Add the dry ingredients and ground hazelnuts, and gently fold together with a spatula until just combined. Fold in the chopped chocolate and plums.

Line the base of a 23 cm cake tin with baking paper. Transfer the batter into the tin and level the surface. Arrange the reserved plum halves on top (cut side up) and sprinkle with the whole hazelnuts.

Bake at 170°C for about 45 – 50 minutes, or until a skewer inserted comes out clean. Remove from the oven and allow to cool.
