
Peanut butter truffles with a flavour that will win you over. In these homemade chocolates, peanut butter is combined with vanilla and white chocolate. They are delicate, smooth, sweet and salty, and their flavour is one that never seems to become boring. They are perfect for the Christmas table as a sweet treat alongside other homemade truffles. Highly recommended!
Makes 30 truffles.
Ingredients for the peanut butter truffles:
- 300 g peanut butter (smooth or crunchy)
- 60 g butter
- 100 g white chocolate
- a large pinch of salt
- 1 teaspoon vanilla extract
- 1½ cups icing sugar (or slightly less)
All ingredients should be at room temperature.
Finely chop the white chocolate and melt it over a bain-marie or in the microwave. Leave to cool slightly.
Place all the ingredients into the bowl of a stand mixer and mix until fully combined and a smooth mixture forms (or with pieces of peanuts, depending on the type of peanut butter used). Transfer to a bowl and chill in the refrigerator until firm, for approximately 12 hours.
After this time, take portions of the mixture and roll them into balls about the size of a small walnut. Chill again.
In addition:
- 400 g dark or plain chocolate
- 40 g white chocolate
- salted peanuts, chopped
Melt both chocolates over a bain-marie.
Dip the peanut butter balls into the dark chocolate and place them onto baking parchment until set. Decorate with thin lines of white chocolate piped from a disposable piping bag with the tip snipped off, then sprinkle with the chopped peanuts. Leave to set completely.
Store the peanut butter truffles in the refrigerator.
