
Pistachio and lime cake is made with ground nuts – pistachios and almonds – and is gluten-free and made without baking powder. This gives it its characteristic “marzipan-like” texture. The addition of freshly grated lime zest combined with the pistachios creates a wonderful flavour combination. The cake is delicious and definitely worth trying :).
Ingredients for the pistachio and lime cake:
- 150 g butter
- 150 g caster sugar
- finely grated zest of 2 limes
- 1 tsp vanilla extract
- 4 large eggs
- 180 g ground almonds
- 130 g ground pistachios
All the ingredients should be at room temperature.
Place the butter and sugar in the bowl of a stand mixer and beat until light and fluffy. Add the freshly grated lime zest and vanilla extract and beat until combined. Add the eggs one at a time, beating the mixture thoroughly after each addition. Add the ground almonds and pistachios, then fold in with a spatula just until combined, no longer.
Transfer the batter to an 8 × 27 cm loaf tin lined with baking paper. Bake at 170°C for approximately 50–60 minutes or longer if necessary, until a skewer inserted into the centre comes out clean.
Leave the pistachio and lime cake to cool, then decorate before serving – for example, dust with icing sugar or drizzle with runny honey.
