
Strawberry granita – I can confidently say it’s even more delicious than the best strawberry ice cream. And lower in calories, too. While ice cream usually requires an ice cream maker or a mixer to churn and aerate the mixture, all you need to make granita is… a fork! Granita is simply flavoured ice crystals. It can be served as a dessert, for example with whipped cream, or as a light starter before an elegant dinner for two. This version is made with wine, so it’s for adults (you can use champagne instead of wine). For children, simply replace the wine with water. It’s wonderful not only with strawberries – try it with cherries or raspberries as well.
Ingredients for strawberry granita:
- 500 g strawberries
- 125 ml red dry or semi-sweet wine
- 90 g sugar
- 1 tablespoon lemon juice
Wash and hull the strawberries.
Place all the ingredients in a bowl or jug and blend until smooth (the sugar should dissolve completely). Pour the mixture into a fairly shallow container and place in the freezer. Every 30 minutes, scrape thoroughly with a fork to break up the forming ice crystals. The granita should eventually have the texture of crushed ice. The wine version takes about 8 hours to freeze; the water-based version freezes more quickly.
Serve the strawberry granita with a dollop of whipped cream, if you like.
