
Zombie guts – a sweet Halloween treat. I won’t say much about this one… this time, let the photos speak for themselves. Sweet cinnamon rolls shaped in an unusual way and spread with jam. Remember that comments such as “yuck”, “horrible” or “disgusting” are, in this case, compliments… ;). And the bake itself is simply delicious.

Ingredients for the yeasted dough:
- 270 g strong white bread flour
- 40 g caster sugar
- ¼ teaspoon salt
- 5 g dried yeast or 10 g fresh yeast
- 40 g butter, melted
- 125 ml milk
- 1 large egg
Mix the flour with the dried yeast (if using fresh yeast, first prepare a yeast starter). Add the remaining ingredients and knead, adding the melted butter towards the end. Knead for long enough to make a soft and elastic dough. Place in a lightly floured bowl, cover with a tea towel and leave in a warm place until doubled in size (about 1½ hours).
Roll the dough out into a rectangle measuring approximately 30 x 45 cm, lightly dusting the work surface and rolling pin with flour if necessary to prevent sticking. Brush the dough with the melted butter and sprinkle evenly with the cinnamon sugar. Using a sharp knife, cut the dough into strips approximately 3–3.5 cm wide. Fold the edges of each strip over and pinch them together, as shown in the photos. Arrange the strips in a 30 x 22 cm baking tin lined with baking paper, seam-side down, shaping them into wavy, intestine-like coils. Cover with a tea towel and leave to rise for about 30–60 minutes, until doubled in size and the pieces have joined together.
Bake in a preheated oven at 180°C for about 13–15 minutes. Remove from the oven and, while still hot, brush generously with the jam. Leave to cool slightly, then tear apart and serve.
Ingredients for the cinnamon filling:
- 40 g butter
- 100 g sugar
- 1½ tablespoons ground cinnamon
Melt the butter and leave to cool slightly. Mix the sugar with the cinnamon and set aside.
Additionally:
- ¾–1 cup red jam (I used a mixture of cherry and strawberry jam), sieved to remove any pieces of fruit
Method for bread machine users:
Place all the yeast dough ingredients into the bread machine in the following order: liquid ingredients first, then dry ingredients, and finally the yeast. Select the ‘dough’ programme (kneading and first rise). Once the programme has finished, remove the dough, knead it lightly, and continue according to the main recipe above.
