Chocolate-covered prunes with marzipan

Yesterday, our parents arrived for a three-week visit – yippee! My mum is a huge fan of chocolate-covered prunes, so I made these especially for her arrival. These chocolate-covered prunes with marzipan are absolutely incredible – even better than shop-bought versions and certainly more economical to make at home. Although the weather was very warm and the chocolate took a while to set, a quick chill in the fridge solved the problem. Mmm… the best homemade chocolates in the world! Highly recommended!

Makes 20 pieces.

Ingredients for chocolate-covered prunes with marzipan:

  • 20 soft Californian prunes
  • ⅓ cup rum or brandy
  • 80 g marzipan
  • 130 g good-quality dark chocolate

The evening before, place the prunes in a bowl and pour over the alcohol. Leave overnight to soak.

The next day, shape the marzipan into small oval pieces resembling large plum stones and insert one into the centre of each prune.

Melt the chocolate in a heatproof bowl set over a pan of gently simmering water. Dip each prune into the melted chocolate, coating it completely. (It helps to skewer each prune with a cocktail stick or bamboo skewer while dipping.) Place the coated prunes onto baking parchment and leave until the chocolate has fully set.
