Blood orange chia pudding

A bright and refreshing winter twist on classic chia pudding. Made with natural yoghurt, freshly squeezed blood orange juice and a touch of honey (or agave nectar), this pudding is both healthy and delicious. The beautiful colour and vibrant flavour of blood oranges make it a particularly special treat during the colder months. If you spot blood oranges at the market, don’t walk past them! 😉

Makes 2 servings.

Ingredients for the blood orange chia pudding:

  • ½ cup natural yoghurt
  • ½ cup freshly squeezed blood orange juice (from approximately 2 blood oranges)
  • ¼ teaspoon orange blossom water (optional, but highly recommended)
  • 2 tablespoons honey or agave nectar
  • ¼ cup chia seeds (white or black)
  • 1 additional blood orange, peeled and sliced, for serving
  • chopped unsalted pistachios, for serving

In a small bowl, combine the yoghurt, blood orange juice, orange blossom water and honey. Add the chia seeds and stir thoroughly. Cover and refrigerate for 8–24 hours. During this time, the chia seeds will absorb the liquid and create a thick, creamy pudding.

When ready to serve, divide the pudding between two serving glasses or bowls. Top with slices of blood orange and sprinkle with chopped pistachios.

Serve chilled.
