
You won’t be disappointed. These whole wheat bran muffins are wholesome, nourishing, moist and delicious. And you won’t feel guilty if you eat two at once ;).
Makes 8 muffins.
Ingredients for the whole wheat bran muffins:
- 1¼ cups whole wheat flour
- ½ cup rolled oats, plus extra for sprinkling
- ⅓ cup wheat bran
- 1 teaspoon baking powder
- ½ teaspoon baking soda
- 1 teaspoon ground cinnamon
- a pinch of salt
- 1 large egg
- ½ cup milk
- ½ cup apple purée
- 3 tablespoons sunflower oil
- ¼ cup maple syrup
All ingredients should be at room temperature.
In one bowl, combine the dry ingredients: whole wheat flour, oats, wheat bran, baking powder, baking soda, cinnamon and salt. In a separate bowl, whisk together the wet ingredients: the egg, milk, apple purée, oil and maple syrup. Add the wet ingredients to the dry ingredients and stir briefly with a spatula, just until combined.
Line a standard muffin tin with paper cases. Divide the batter between the cases, filling them slightly more than three-quarters full. Sprinkle the tops with additional oats.
Bake at 190°C for approximately 25 minutes, or until a skewer inserted into the centre comes out clean. Remove from the oven and cool on a wire rack.
