Mango, vanilla and pistachio yoghurt dessert 

This mango, vanilla and pistachio yoghurt dessert is a quick and healthy treat that can be prepared in just a few minutes. Light and refreshing, it is made with ripe fresh mango and thick natural yoghurt. All you need to do is blend the ingredients together. It is the perfect choice for breakfast, a light dessert or an afternoon snack on hot summer days. 🙂

Makes 2 servings.

Ingredients for the mango, vanilla and pistachio yoghurt dessert:

  • 450 g thick natural yoghurt
  • a pinch of ground cardamom
  • 1 medium ripe mango
  • 2 teaspoons light brown sugar
  • seeds from 1 vanilla pod
  • 2 teaspoons shelled pistachios, finely chopped

Peel the mango and cut it into cubes. Place the mango in a blender, or blend using a hand blender until smooth. Add the yoghurt, sugar, cardamom and vanilla seeds. Blend until smooth and creamy.

Divide the mixture between two serving glasses or dessert bowls. Top each portion with a spoonful of thick natural yoghurt and sprinkle with the chopped pistachios. Serve the mango, vanilla and pistachio yoghurt dessert immediately.
