
Ta-da! I think I can officially say that Nigella Express is open! Although I greeted it rather „cold” at first – almost ice-cold, you might say 😉 – the book itself is warm, fragrant and full of recipes I’d love to try immediately. That doesn’t mean her earlier books will be forgotten, of course – there are still far too many recipes left to try. This ice cream recipe caught my eye straight away because I absolutely love pomegranates. Thanks to the freshly squeezed juice, the ice cream tastes wonderfully refreshing – you wouldn’t even guess how much cream it contains. Highly recommended!
Ingredients for pomegranate ice cream:
- 2 pomegranates (plus the seeds from a third, for decoration)
- 1 lime
- 140 g icing sugar
- 500 ml double cream, chilled
Juice the two pomegranates (or use 175 ml ready-made pomegranate juice) and the lime. Add the icing sugar and stir until dissolved. Whip the chilled cream and, towards the end of whipping, slowly pour in the fruit juice. Continue whipping until you obtain a smooth, pale pink cream mixture.
Transfer the mixture to a container and level the surface. Freeze for about 4 hours or overnight. Before serving, decorate with the seeds from the third pomegranate.
No ice cream maker is needed.
