
I have a suggestion for tomorrow’s breakfast – if you do not have to rush anywhere because you are on holiday. They are delicate and fluffy, even though I made them with wholemeal spelt flour. The pancake batter is very simple to make; all you need to do is mix the ingredients together with a fork. No fat is added to the batter either, and the pancakes are cooked with only a minimal amount of oil. Highly recommended!
Makes a large plateful of pancakes.
Ingredients for the wholemeal spelt pancakes with pear:
- 1½ cups wholemeal spelt flour
- 1 cup buttermilk
- 1½ teaspoons bicarbonate of soda
- 2 large eggs
- 2½ tablespoons caster sugar or icing sugar
- 1 teaspoon vanilla extract
- 2 pears, peeled and grated on the coarse side of a grater (or sliced very thinly)
All ingredients should be at room temperature.
Pour the buttermilk into a large bowl, add the eggs, sugar and vanilla extract, and whisk until combined. Next, add the wholemeal spelt flour and bicarbonate of soda, then mix thoroughly until a smooth batter forms. Finally, add the grated pears and gently stir to distribute them evenly throughout the batter.
Heat a small amount of oil in a frying pan. Spoon portions of the batter into the pan, forming pancakes. Cook over a medium heat until bubbles begin to appear on the surface, then turn over and cook on the other side until light golden brown.
Serve with yoghurt or golden syrup.
