
Probably the best pancakes I’ve ever eaten. And those bananas in them… absolutely heavenly! There was a suggestion to serve them with pecans, but they didn’t last long enough… Maybe next time… ;).
Makes about 10 pancakes.
Ingredients for banana pancakes:
- 1 cup plain flour
- 1 heaped teaspoon baking powder
- 2 tablespoons icing sugar
- 1¼ cups buttermilk or kefir
- 1 egg, lightly beaten
- 2 teaspoons maple syrup / golden syrup / runny honey
- 20 g butter, melted
- 1–1½ bananas (about 200 g peeled), sliced
To serve:
- maple syrup
- pecans, lightly toasted and roughly chopped
In a large bowl, mix the beaten egg, buttermilk, syrup and melted butter. Sift in the flour, icing sugar and baking powder, then mix until combined. Add the sliced bananas and gently stir. The batter will be quite thick.
Cook the banana pancakes in a non-stick frying pan, without oil or with just a small amount if needed. Turn them over when bubbles appear on the surface and cook until lightly golden.
Serve the banana pancakes with maple syrup and pecans.
