
The original recipe calls these “Snickers”, but in our opinion they don’t really taste like the famous chocolate bars. Instead, they’re wonderfully nutty bars – sweet, satisfying, slightly chewy, with a lovely crunch from the cornflakes. They’re incredibly quick to make and require no baking at all. Both children and adults love them. Highly recommended!
Ingredients for the peanut butter bars:
- 200 g peanut butter (smooth or crunchy)
- 100 g caster sugar
- 200 ml golden syrup
- 100 g cornflakes
- 100 g desiccated coconut
- 200 g milk or dark chocolate (I found 100 g was plenty)
Place the peanut butter, golden syrup and sugar into a heavy-based saucepan. Heat gently over a low heat, stirring until the ingredients have melted together into a smooth, pourable mixture. Be careful not to let it catch or burn.
In a separate bowl, combine the cornflakes and desiccated coconut. Pour over the warm peanut butter mixture and stir thoroughly until everything is evenly coated.
Line a 29 × 12 cm loaf tin with baking paper. Transfer the mixture to the tin, press it down evenly and smooth the surface. Leave to cool completely.
Chop the chocolate and melt it over a bain-marie or in the microwave. Spread the melted chocolate evenly over the cooled peanut butter mixture. Leave until the chocolate has set—either chill in the fridge for 2–3 hours or leave overnight at room temperature. Once set, cut into bars.
