
Coconut and blackcurrant ice lollies are a wonderfully refreshing vegan dessert. Made with just three ingredients and no dairy, they rely on creamy coconut milk (or coconut cream) and the vibrant flavour of blackcurrants. Frozen in ice lolly moulds, they are incredibly easy to prepare and absolutely delicious!
Makes 8 ice lollies.
Ingredients for the coconut blackcurrant ice lollies:
- 500 g blackcurrants
- 110 g sugar
- 1 can (400 ml) full-fat coconut milk or coconut cream, chilled
Place the blackcurrants (removed from their stalks) into a saucepan and sprinkle over the sugar. Set over medium heat and bring to the boil, stirring occasionally until the sugar has completely dissolved. Remove from the heat and press the mixture through a fine sieve to remove the skins and seeds. Leave to cool completely.
Once cooled, blend the blackcurrant purée with the coconut milk or coconut cream until smooth. Pour the mixture into ice lolly moulds, insert the sticks and freeze, preferably for 24 hours.
