Oven baked curd cheese filled crêpes

Delicious crêpes filled with sweetened curd cheese, baked in the oven and served with a sweet yoghurt sauce and fresh berries. A wonderful way to serve your favourite crêpes and a truly satisfying sweet treat that everyone will love. The curd cheese-filled crêpes can be prepared several hours in advance and simply baked just before serving. Highly recommended!

Ingredients for 4 servings.

Ingredients for the curd cheese filled crêpes:

  • 8 crêpes (from your favourite recipe)
  • 500 g full-fat or semi-fat curd cheese
  • 2 large egg yolks
  • 100 g caster sugar
  • 2 tsp potato starch
  • 8 g vanilla sugar

Pass the curd cheese once through a potato ricer or mash thoroughly (you can also use ready-ground curd cheese). Mix with the remaining ingredients for the cheese filling. Spread the cheese filling over the crêpes, roll each one up tightly, then cut each crêpe in half.

Additionally:

  • 250 ml Greek yoghurt or natural yoghurt
  • 2 tbsp maple syrup, runny honey or golden syrup
  • fresh berries or other small fruit, and mint leaves
  • butter, for greasing and baking

Mix the yoghurt with the maple syrup, honey or golden syrup.

Grease a baking dish with butter. Arrange the cheese-filled crêpes in the dish, positioning them so that each layer rests against the previous one. Dot the top with small pieces of butter (about 2–3 tbsp butter in total).

Bake at 180°C for approximately 30 minutes, or until the crêpes are lightly golden. Remove from the oven, drizzle with the yoghurt sauce and decorate with fresh fruit and mint leaves. Serve hot.
