
A smoothie – the quickest and easiest dessert for warmer days :). You might just fall in love with the combination of strawberries and coconut cream… absolutely delicious!
Ingredients for strawberry and coconut smoothie:
- 1 tin (400 ml) coconut cream (or thick coconut milk)*
- 450 g strawberries (fresh or frozen – if using frozen, skip the ice)
- freshly squeezed juice of ½ a lemon
- 2 tablespoons honey
- a few ice cubes
Place all the ingredients into a blender and blend until smooth. Pour into glasses and serve straight away.
If you don’t have coconut cream, you can use regular coconut milk and add half a banana to help thicken the smoothie.
